Among colleagues .....
My work brings me to stay away from home all week, and takes me to meet many colleagues around a bit all over Italy. Last week I was in Latin, and I had the pleasure of dining with two dear friends: Louis Lombardi, chef and president of the Latin Chefs and Massimiliano Sepe, chef and owner of Casa Catullo Restaurant Fondi, who hosted us for the evening. Together with my colleague Gianluigi me and another friend of America, Carlo Villani, owner and responsable commercial Sabagel, a company that sells food. The hospitality of our friends was, as always, (I went many times to Latin America as a guest of the association headed by Luigi) very warm and I must say that Maximilian has amazed us with his dishes. We started with a carpaccio of fresh yellowtail, marinated lightly to bring out even more tender flesh of the fish. Delicious! Then we continued with a series of fresh seafood, cockles, clams and razor clams, shrimps of the Tyrrhenian Sea, raw, salad and then sea snails, cuttlefish with broccoli, prawn linguine with polenta and a delicious taste of the sea so good I eat very few in my life. All very well approached by white wines such as Petit Verdot Casale del Giglio, known winery just in Latin America. In short, two hours of pure tasting, with lots of fish on the Tyrrhenian Sea but with a special commendation Massimiliano chef who has, with few gestures, enhance the quality and flavor of the processed product without affecting its characteristics.
